February Crock Pot Cooking Wrap Up + Salsa Chicken

As February comes to an end,  I am excited to report that spring is in the air…  I enjoyed a sunny day in Portland where the temperature reached 60 degrees.  I got to take my dogs for a long walk and I could literally smell flowers blooming as we walked out the front door into the fresh air.

Guest Blogger:  BayRunner Jamie shared that she uses her crock pot to cook chicken.  Simply pour a jar of salsa in the crock pot and a couple of chicken breasts.  Once cooked, the chicken is so tender and moist you can shred it and mix together with the salsa and the end results works great in a wrap.  Sounds like a quick an easy lunch!

Next Month’s Theme:  Since spring is around the corner and we will be celebrating St. Patrick’s Day, March’s theme will be “Eat Your Greens.”  I’ll be posting recipes that incorporate leafy greens and other green veggies and talk about the multitude of health benefits of “going green.”
