Meatless Monday – Simple Black Bean Chili with Brown Rice

Happy Monday! I don’t always go meatless on Mondays, but it might be something new I try…

Three reasons I’m happy tonight:

1) Meatless Monday – Simple black bean chili with brown rice:

1 28 oz can of diced tomatoes
1 14 oz can of black beans
1.5 cups quick cook brown rice
1 medium white onion
2 cloves of garlic
Salt, pepper, cumin, chili powder
Garnished with cilantro, goat cheese crumbles and a splash of hot sauce

Quick, easy and tasty!


2) Pay Day – Today I found out I got a raise! It was a small one, but in this economy I’m thankful to have a job and one where I get a raise.

3) Rest Day – Mondays are a rest day according to my Half Marathon training plan. I usually feel guilty when I take a day off from working out, but last week I forced myself to take a rest day, and my run on the next day felt great! So there might be something to this whole concept of a rest day…
